ZITI WITH CHICKEN AND VEGETABLES
Full of flavor and goes a long way. Great for parties!
Feel free to use your favorite vegetables and your favorite cheeses.
Serves 6 to 8
Preheat oven to 350.
Ingredients
16 Oz. Ziti
1 tbs olive oil
3 chicken breast halves (approx. 2 lbs.) cubed
1 sm. onion (chopped)
4 cloves garlic (minced)
3 plum tomatoes (cut bite sized)
2 red pepper (cut bite sized)
1 zucchini (cut bite sized)
broccoli if desired
10 0z spinach
3 tbs butter
4 tbs four
2 cups milk
3 tbs tomato pesto (sold in jars)
3/4 cup grated Parmesan cheese
1 tsp crushed red pepper
1/2 cup Asagio
1/4 cup Fontina (optional)
3/4 cup Mozzarella
salt / pepper
Directions
Cook pasta, drain and rinse in cold water and place in large bowl.
Heat olive oil in skillet.
Cook chicken until almost cooked through.
Add onion and cook four minutes.
Add garlic and cook two minutes.
Transfer to bowl with pasta.
In saute pan or in microwave cook pepper, broccoli, zucchini, tomato until softened (approx. 6 minutes).
Add spinach and cook until wilted.
Transfer to bowl with pasta.
Melt butter in skillet.
Whisk in flour until incorporated.
Whisk in milk until incorporated.
Add tomato pesto.
Add cheeses (except mozzarella), crushed red pepper, salt and pepper.
add mix to pasta bowl and place in 9 by 13 greased casserole.
Top with mozzarella.
Bake at 350 for 30 minutes.
